O’Briens Butchers have been awarded the Best Speciality Sausage in Ireland trophy at the recent Craft Butchers National Sausage and Pudding Competition for their venison sausage.
They were also judged to be the Supreme Champions for 2023.
The O’Brien family have been in the butchery business for over 40 years, and now have another reason to celebrate.
They have two stores in Kilkenny, and their own abattoir, where they process their own cattle from the farm at Bonnetsrath — a total farm to fork enterprise.
Beef is dry aged for 28 days to arrive on the customers plate at the peak of perfection.
The competition organisers, Associated Craft Butchers of Ireland, said they were overwhelmed by the number of entries to the competition!
